Pull off the meat for this casserole (freeze any extras for chicken salad, soup, or fried rice later), then use what’s left—bones, skin, all of it—to make a quick stock on the stovetop or in your Instant Pot. You’ll have plenty for this recipe and a few jars for the freezer.
