This Mexican pizza casserole tastes like the ’90s, in the best way

This casserole is an absolute breeze to whip up, and it is as tasty as it is nostalgic. My first bite immediately transported me back in time to a special purple and teal booth, eating a Mexican pizza at the local Taco Bell. 

Your kids will inhale it (you might too), so you might double the batch so you have leftovers!

Ingredients

  • 32 oz refried beans (canned or homemade)
  • 16 fajita-size tortillas (or larger; just layer to fit your dish)
  • 10 oz red enchilada sauce
  • 8 oz Alfredo sauce
  • 1–2 cups fiesta blend cheese

Instructions

  1. Preheat oven to 375°F.
  2. Spray the bottom of a medium casserole dish with nonstick spray.
  3. In a small bowl, mix together the enchilada and Alfredo sauces.
  4. Layer 8 tortillas on the bottom of the dish.
  5. Spread half of the refried beans over the tortillas.
  6. Pour half of the sauce mixture over the beans.
  7. Sprinkle with cheese.
  8. Repeat layers with remaining tortillas, beans, sauce, and cheese.
  9. Cover with foil and bake for 25 minutes.
  10. Remove foil and bake another 15 minutes, or until cheese is golden brown.
  11. Let cool for 15 minutes before serving.

Toppings: sour cream, lime crema, cilantro, salsa, diced onions, avocado—whatever your heart desires.
